P96 (no flour) Chocolate Chip Peanut Butter blender muffins:
ReplyDelete1 large ripe banana
2 large eggs
1 cup creamy peanut butter
2 packets P96 Vanilla (I can hook you up!!!)
6 tablespoons honey (Bilbys can hook you up!!!)
2 tablespoons vanilla extract
1/2 teaspoon baking soda
1 cup mini chocolate chips
Preheat oven to 400 degrees f
Grease or line mini muffin pans
In Blender Combine first 8 ingredients. Blend on high until smooth (about 1 minute).
Stir in chocolate chips by hand.
Drop by rounded tablespoons into muffin tins (3/4 full).
Bake 8-12 minutes. Check with a toothpick.
Keep in an airtight container up to 5 days, or freezer for 6 months. Makes roughly 40 mini muffins.
